Fall in love with snails all over again!!!
What you need
4-6 large snails
2-3 Medium sized greenish-yellow plantains (you want plantain that’s not soft or too green)
1/2 a teaspoon of Garlic
1 bulb of onion
2 large tomatoes
1 medium Scotch Bonnet pepper
4 table spoons of oil
2 cubes of Knorr/Maggi
1 pinch of thyme
Snails
Cut snails in half, clean and place into a pot
Pour in 3 cups of water
Add 1 pinch of salt and boil for 1-1.5 hours (depending on desired tenderness)
Unripe plantain
Peel off plantain skin and cut in round pieces
Place cleaned plantains into a pot and add 2-3 cups of water
Add 1 pinch of salt and boil for 20 minutes (depending on desired tenderness)
Sauce
- Pour oil into large pot.
- Add in garlic, sliced onions and pepper (let sizzle for 2 min, stir occasionally)
- Add in diced tomatoes, cover halfway and let cook on medium low heat for 7 mins (stir occasionally)
- Turn down heat (low high), add Thyme and knorr, stir to mix in seasonings
- Add in 1 ounce of water, stir
- Pour in snails
- Add in 2 ounces of water, and let cook on medium low heat for 10mins. Stir occasionally
Let simmer and serve when ready! Enjoy!! 🙂
