Suya is the ultimate Nigerian street snack that has permeated into other surrounding west african countries. The blend of spices and the juiciness of the grilled meat is divine. Suya is particularly unique to the northerners in Nigeria as they have the perfect blend of spices that they add to the grilled beef. Traditionally, when the beef is marinated, the mallams (men that make the suya) dip the sticks of meat in hot oil to temporarily fry the beef to get a crispy texture for about 1 – 2 minutes and then they grill it. In this recipe, I did not do that in my recipe as I tried to limit the oil but that could be an option when you try the recipe. Ingredients
1/2 pound of Beef flank
1 cup of crushed kuli kuli (crushed peanuts that the oil has been drained)
2 teaspoons of Paprika
1 teaspoon of Ginger powder
2 seasoning cubes
1 teaspoon of garlic powder
1 teaspoon of onion powder
2 tablespoon of Chilli powder( You can add more)
Onions (garnishing)
Tomato(garnishing)
1/2 teaspoon of crayfish powder
2 pieces of deseeded and crushed Uda (Negro Pepper)
Salt 1.5 teaspoons (optional if you are trying to reduce salt)
Oil 1 cooking spoon
Method:
Cut the your beef into thin stripes. (It is easier to cut when you freeze the beef before cutting to make your stripes come out smooth)
Mix your crushed kuli kuli with all your spices and rub the beef with the mix. Pour the oil over the beef and leave it to marinate for about 3 hours. (Tip: rub oil on your hands before handling the spices as you would be handling chilli powder or wear gloves)
You can choose to place the beef in skewers or leave as is.
Preheat your oven to 375 degrees, line the oven tray with foil and grease the foil with oil then place the seasoned beef on the foil and place in the oven to grill for 20 minutes, turn it over to brown for another 10 minutes. Make sure to check if the beef is cooked. Check for seasoning correction and re-season as necessary. (If the beef is not browning but is cooked, increase the temperature of the oven and allow to brown for a few extra minutes)
Serve with onions and tomatoes as garnish.
p:s – If you have the Suya spice mix, you can skip the step of mixing the spices and just rub your suya mix on with oil on the beef. You may choose to add more seasoning cubes or chilli powder.
