I had been sending out a bunch of recipes in the past and i wasn’t sure if people were actually using them which is why i put up the post asking if people wanted the recipe and clearly you guys do. For my new Non-Nigerian Followers of this blog, feel free to try the recipe with less spices as Nigerians looooooove spicy food. Also do not forget to send your recipes to afrolems { at} gmail.com
Recipe for Yam and Fish Sauce
Ingredients
For the Yam
1 table-spoon Salt
3 cups of water
For the Fish Sauce
Fish (I used Tilapia but that is a personal preference as any type of fish can be used)
4 Tomatoes or 1 can of diced tomatoes
Green and Yellow Bell peppers
1 bulb of onions
1 cooking spoon of vegetable oil ( this is preference again as you can use olive oil or other options)
a lump of butter
1 teaspoon of curry
a pinch of thyme
2 tablespoons of salt
3 cubes of maggi
1 tablespoon of cayenne pepper or dry Cameroonian pepper(depending on your spice level)
Method
*Clean out the Fish (remove scales, remove gills, wash the blood out)
*Season the fish with salt and 1/2 table spoon of cayenne pepper
*Fry the Fish in a deep fryer till brown or for 10 minutes
*Peel the Yam and cut them into squares
*Place in pot with 3 cups of water and bring to boil.
*Boil for 15 minutes. Every 5 minutes, bury a fork into the yam to test if its soft and add 1 tablespoon of salt when its soft and drain the left over water. If its not soft add more water while boiling
*Heat up the lump of butter and fry the half of the onions(cut the onions in a ring shape) and bell pepper.
*add 1 cooking spoon of oil to the frying onions and pepper then add the diced tomatoes and fresh pepper
* As you fry the tomatoes mash them and let it fry for 5 minutes on medium heat
*add your salt, pepper, maggi, curry, thyme and leave to fry for 3 minutes
* Add the rest of your onions and add the fried fish to the sauce and stir in. Do not stir excessively as the fish may fall apart. A strategy would be to turn the fish back and forth and pour the sauce on it as opposed to stirring the way you would stir soup.
*allow to simmer for 3 minutes
Food is Ready.
