• Chef of the Week: Feyisope Akinyosoye – Fried Rice and Fish

    Fried Rice
    Ingredients
    Mixed Vegetables
    1 and a half balls of onion
    Small Peper(optional)
    Vegetable oil
    Knorr(maggi)
    Thyme
    Curry
    Salt
    For the fish you need:
    Salt
    Thyme
    Dry pepper
    Knorr
    Fish(crocker)
    Recipe
    1. You put  a bit of vegetable oil in a pan
    2You slice your onion and small red pepper into thin slices and put into the already hot oil
    3. Then you pour in the amount of mixed vegetables you need into the same pan of hot oil and mix them all together
    4. You add a bit of knorr, curry and thyme, and salt to taste
    5. You allow the ingredients to simmer for a while, then take it off after 7-10 minutes
    6. You get another pot and also put a bit of oil in it
    7. Then you slice what is left of your onion into it and allow it to fry for a little while (note:you need low heat for the next part)
    8. You add your rice (WASHED raw rice) to the oil and onion and allow it to fry, make sure the rice doesn’t turn brown to do this you have to stir it continuously 
    9. Then you add your curry, thyme,knorr and salt to taste.
    10. Then you continue to fry for about 5-10mins.
    11. Then you add, already boiled water ( a little at first so the rice wont get soggy) and allow to boil for a while
    12. Once the rice is soft, you add the already cooked mixed vegetables and put it in the oven (on bake) for like another 5-10 minutes so the rice doesnt get soggy from the oil you just poured into it.
    Fried Fish
    1. Put a lot of oil (enough to cover the fish halfway) and allow to get hot, also dice a little bit of onion into the oil
    2.You pour in your thyme, curry, crushed knorr and pepper into a bowl and add a bit of oil to it
    3. Using a basting brush, or your hands, rub in the ingredients on the fish, all around it
    4. Then fry for 10mins  (but the is a trick is to, fry until the amount of bubbles around the fish reduces then it is done, don’t forget to flip the fish as well)
    5. Then you serve the fish with your fried rice :))

        Very many similarities 🙂 Especially with ingredients. I lived with a Jamaican lady a little while ago and didn’t find her food super different from the Nigerian menu 🙂

          For the ingredients you listed you said to get curry? What type of curry are you talking about? Is there a name for it?
