A few weeks ago, I posted this simple and quick recipe on our Facebook and Instagram account. I figured that other people not following us on those accounts may have missed out on this quick snack. I had excess cocoyam from making Ekpangnkukwo and decided to fry the cocoyam instead. It was very tasty. Cocoyam is also known as Taro root so if you are outside of Nigeria and you see it in the grocery store, you can pick it up, its the same thing. Enjoy this quick snack.
Ingredients (Serves 2 people)
2 medium sized cocoyams (Taro)
1 cup of shrimp
1 piece of scorpion pepper (substitute scotch bonnet peppers /ata rodo)
1 clove of garlic
A handful of chopped onions
A handful of chopped tomatoes
A pinch of chopped scent leaves
Seasoning cubes
1/2 cooking spoon of oil
Salt to Taste
Method
Cut your cocoyam into strips, slightly salt and fry.
For the sauce blend peppers, garlic and onion.
Heat up your oil and stir-fry the pepper blend.
Add some chopped tomatoes, scent leaf and seasoning cubes.
Chop your shrimps and stir-fry in the sauce till done.
Serve with cocoyam chips
