• Guest Post: Chocolate Vegan Cake by Anaya

    One very beautiful evening last week, My favorite toddler’s mum sent me a few pictures of Anaya baking. The picture warmed my heart because i absolutely adore this kid and to know she likes to bake/cook just made me love her even more. My darling Anaya is one of those kids that you spend five minutes with and you just want to put them in your bag and keep going or you even volunteer to baby-sit. My Anaya however has allergies so she is very restricted in what she can eat. Imagine as a child not being able to have regular cake or ice-cream? Her mum found this recipe and Anaya tried it out and loved it so I decided to share it with you all. Hopefully many people like Anaya have found a solution to their allergy problems except you are allergic to the ingredients below.

    Cake Ingredients

    1 1/4 cups flour
    1 cup sugar
    1/3 cup unsweetened cocoa powder
    1 tsp baking soda
    1/2 tsp salt
    1 cup warm water
    1 tsp vanilla extract
    1/3 cup vegetable oil
    1 tsp distilled white or apple cider vinegar
     
    Chocolate Glaze
    1/2 cup sugar
    4 tbsp margarine
    2 tbsp soy milk
    2 tbsp unsweetened cocoa powder
    2 tsp vanilla extract
